Antonia Lofaso
Antonia's cuisine is a means to explore her life. Curiosity grew in her after she moved from her home in the Long Island suburbs to explore the vast cultural diversity in Los Angeles. Cavatelli and Carnitas have the ability to blend seamlessly on the menu, an idea that has developed over the years. What remains, however, with her food is an unifying vision of the future that longingly remembers the past. Scopa Italian Roots was opened in 2013 by Lofaso who was influenced with her Italian American heritage. The restaurant was greeted with an enthusiastic reception. The restaurant's take on old-school Italian is hailed as one of the best restaurants for Italian food within Los Angeles. Food at Lofaso is authentic, inviting and undeniably pleasing. Lofaso apprenticed under culinary legends and absorbed their sophisticate techniques but she was not afraid to make bold decisions in order to follow her intuition. She was in close contact with many famous people and quickly rose through the ranks in Wolfgang Puck's Spago. Lofaso and Sal Aurora partnered in 2011 to create Black Market Liquor Bar Studio City. Through Black Market and the business collaborations she set up, she found an appropriate home. Lofaso could find the space to be creative that she desired through this collaboration. Black Market has no one idea in its head and is the same way. The menu could start with potato chips dill Shishito chilies, and go on to an Korean chicken dish, meatballs and wings. Antonia, the chef behind this menu filled with mouthwatering and vibrant flavors, anchors everything. Lofaso assessed her success in the field by her capacity to both understand and be genuine to her audience. The Top Chef Chicago episode and Top Chef: All Stars highlighted her capacity to be her self outside of the culinary environment. In the years since, she has continued her work in front of cameras with CNN's Restaurant Startup Judge as well as regular appearances on Food Network's Cutthroat Kitchen Man vs. Child. Lofaso joined forces together with Penguin at the end of 2012 in order to publish The Busy Mom's Cookbook 100 recipes to prepare Delicious homemade Meals. The book describes the challenges she encountered while attending the French Culinary Institute and raising her daughter Xea. Lofaso maintains that the source of all her achievements is her kitchen.
